Poor Man’s Lox Sandwich
Let me be completely transparent here. I’m not sure the following can completely qualify as a recipe but more of a creation, but it’s just too damn good not to share with the world. Or whoever happens to read this blog.
It’s vegetarian (and easily made vegan!), delicious and versatile, IF you follow my one rule. Must. Have. Capers. Here is exactly how I made my breakfast earlier today with some variations I like to throw in the mix at the end. World, let me introduce you to my Poor Man’s Lox Sandwich. It has the flavor profile of a deli-style lox & bagel sans the price tag.

Poor Man’s Lox Sandwich
  • Toast 1 slice of sourdough bread and spread with a dollop of cream cheese... I like whipped

  • Top with a generous handful of baby arugula

  • Throw on some sliced red onion (I’m a gluten for punishment so I always go heavy on red onion), tomatoes, hard boiled egg (more protein!) and LOTS. OF. CAPERS.

  • Dress with a big squeeze of lemon and cracked black pepper... the capers have enough briny-ness to not need any salt

I like to sub whole wheat wraps if I don’t have sourdough on hand (unlike many of you, making fresh sourdough is a trend I haven’t jumped on). If going vegan, the cream cheese is swapped for hummus, omit the egg and add avocado slices. Another favorite add on is a sprinkling of Bragg’s Nutritional Yeast and alfalfa sprouts.

It’s basically an open-faced sandwich salad!  I promise, it won’t disappoint. Give this quick, healthy ‘recipe’ a try ASAP and comment with the variations you play with!

Method to my madness


  • 1 slice sourdough bread or whole wheat wrap

  • 1 TBS cream cheese or hummus

  • Handful of baby arugula 

  • Red onion, sliced

  • Tomato, sliced

  • Hard boiled egg, sliced

  • All the capers

  • Squeeze of lemon

  • Cracked black pepper
